Is it possible that you are baking them long...Hm... Is it possible that you are baking them longer than needed on the first bake, making them crispier than need be? I'm really not an expert on baking, but my biscotti (the loaf) is not very crisp on the first bake. And I use a serrated blade, just as you do.
