Tripe porn


So this is what I came home to last night.

Tripe.

With pork.

And ceci beans.

A little tomato.

Nothing left to say.

  1. I just don't share your love of tripe, Mr. M. I've tried it a number of times in various preparations. It's too funky and often too chewy for me. Generally, I like funk in food, and enjoy eating most offal, but there's something in tripe that's off-putting for me.

  4. Finished the last of it last night. One of the best tripe dishes ever, no lie.

    Washed it down with one fine Dolcetto di Dogliani, if anybody's interested: an '05 San Fereolo (sadly purchased at a discount at the now defunct Tropa wine shop on Congress).
