Potato + egg = happy



You are not apt to learn the slightest thing here.

You will merely catch a glimpse into what makes me happy.

Potatoes and eggs.

That's what makes me happy.


Slice them thin.


Season with salt and pepper and fry in extra virgin olive oil.


Drop in a couple fresh eggs.


I like it with a hunk of cheese on the side, Grana Padano here.

I am a simple -- happy -- man.

BTW, this will sound weird, but in all the years I've been eating this, I don't think I've ever had it for breakfast. Always for lunch, or late night.

Nice concept, and I like the photos, especially that first one.
But I hope you're taking your Lipitor. That hunk of cheese alone is enough to stop a heart.

These are the kinds of meals my Dad would make for us if my Mom wasn't home. Truth be told, they were some of the best dinners. This looks delicious.

My grandmother made this, too, only the potatoes were cut up into little cubes and browned probably in butter. No cheese, though.

Ladies and Jim: This dish does seem to hit home, doesn't it. I just spent a couple days with family, who follow this blog it appears (hi folks!), and was amazed at how such a simple food touches so many.
