Grilled radicchio & mozzarella
Here's a quickie for a summer Sunday.
Cut some radicchio heads in half, douse them with olive oil and season with salt and pepper.
Toss them on the grill and cook until tender, maybe fifteen minutes or so, and turning a couple times.
Remove from the grill and transfer to a baking tray. Top with slices of fresh mozzarella and return to the grill for a minute or two, or until the cheese is nicely melted.
I said it was a quickie, didn't I?

Grilling sharp flavored vegetables like raddicchio (radishes too, garlic) really mellows and brings out a really nice roasted flavor. Topping it with mozzarella cheese makes it a meal.

Ive never tried radicchio with mozzarella. Great idea. Thanks for sharing I will try for sure.
Must try before grilling season is over. Never have done radicchio... yet. Of course you could melt mozzarella on cardboard and I'd give it a whirl.
