Hey Mister Meatball. Love the blog. I just got back from Arthur Ave. where the parma prosciutto meister gave me a bag of trimmings from a fresh ham. Lots of white fat, plus jerky-like stuff from the edges that they were going to throw out. But now I have it! I know I can do some magic with it, I just don't know what. Any suggestions?

Well, since we're talking pasta here I'd say use the fatty stuff for that: saute it with some garlic and hot pepper in lots of olive oil, maybe a little onion too. Makes a nice quick dish. As for the hard ends, that's, well, tougher. Maybe throw in a pot of soup or beans. Good luck.
